Osaka Shouhin Keikaku & My New Sushi Cake

I've been participating "Osaka Shouhin Keikaku" which is  operated by Osaka Prefecture.
"Osaka Shouhin Keikaku" is a project to send good product from Osaka to all over Japan.
To enhance the charm of Osaka, to make Osaka more exciting..
I'm a 3rd term student and totally 15 companies and stores are participating for this organization.

We got a lot of advice from wonderful teachers and staffs,we helped each other,
and we helped each other..
Then we produced our new items.

My new item is of course ...SUSHI CAKE!
This time I chosen sea eel from Osaka sea.

I cooked sea eel with red wine, suger and soy sauce.
After 20 minute, took out sea eel from a pot.
I make a round shaped pressed sushi using cooked sea eel.

Keep boiling the stock until it become dark, and thick..
and put some agar.
and the sauce is complete.

Then, pour sauce on the sushi over and over.

When it become cooler.  finish!!

It looks like chocolate cake isn't it?

Coming Feb 1st -3rd,I will participate in a Tokyo international gift show to be held at Tokyo Bigsite.
(I'll stay only 1st day and leave my display then have to come back to Osaka for my restaurant)

I'll be there with my colleagues of "Osaka Shouhin Keikaku" and show my new sushi cake to buyer and seller.
I'm looking forward to it!!

Vegetable Shin Godzilla (Godzilla Resurgence)

I Love "Godzilla"!!
It is not only because this monster was born in Japan, but also
this monster has a high potential.

I went to see this movie with my son last week and we quit liked it!!
We also went to see the Godzilla 2 years ago which was directed by Gareth Edwards.
Actually we enjoyed that one also!

I know that the monster called "the Godzilla" gives off totally different character by the intention of the maker.

I don't want to explain about this movie a lot because I'm not sure when this movie start in overseas.
Well, let's talk about this after you watched!

until then, Please enjoy my vegetable Godzilla.

First of all, peel the skin and make a different parts such as body, tale, arms, hands, fins and more.

Oh I used 6 sweet potatoes this time by the way.
in the movie , that was a biggest  Godzilla compare with all past movies.
therefore I tried to make it bigger!

This is not bananas.. it is a tail...:)

Make a fins one by one ....

and put them  into his body with bamboo needle
I don't want to use glue because those are still food.

Now, lets make eyes with peppers.
I look for pepper of the best form for the eyes.

Then I dig the small hole into it.

Extreme sushi cake

I've been making a lot of  Sushi cake , also I sometime make a large vegetable carving.

When I make combination of both...Extreme Sushi Cake is born!!
(those are for take-out and special order made)

Here are how.

I made dragon with a lot of carrots.

I made tower with carrot. 

then  made a  wooden bridge with sweet potato,  carps with vegetable ,made tortoise with cucumber...and settled them on the sushi cake..

I made a carrots space needle for the memory of our  lovely friend "Tsu-chan"
for her birthday.

Here was an order of birthday present  for the Korean idol "Doyeon"
I taught that bear and guitar are his favorite.. so I carved.


one day, I had request ." Could you make a sushi cake with Dinosaur?" 
So I made a sample with sushi(used sauce of ell to put the dark color) 
as below but seems not so nice.......

So I changed my mind.  Well, Let's make Dinosaur with vegetable carving!

Made a pteranodon with sweet potato.

made a Mosasaurus with carrot.

and I cut the "nori"  into a shape of  scallop and ammonite.
make wasabi into the figure of the leaf.
then decorate them together on the sushi cake.

The Jurassic Sushi cake complete!

This sushi cake was order for a birthday so the pteranodon bite the 
birthday crown. :)

1 day Sushi School in Osaka

Last week, We had new students in our Sushi class.
They are American and staying in Thailand to teach English.
This time they visited Japan for 5 days(Tokyo 3 days and Osaka 2 days).
They visited our restaurant even thought they only stay 2 days in Osaka!
I can't say thank them enough!

They work very well and made a delicious sushi!

I really wish that they'll have a wonderful time in Thailand.
and hopefully they'll be back to Japan someday.

Short term sushi school has started!

I started a new project. It's called "Cooking School For Foreigners and Sightseers".
It's a one day lesson of sushi or vegetable carving.  for more detail from my website here
My first student was from Toronto Canada. Yes! My second hometown!

He was a wonderful person and actually he did very well!
Look at this beautiful Nigiri sushi... He made all of the by himself !

He challenged vegetable carving class also.

How about taking a sushi or vegetable cariving class for the highlights of your trip to Osaka, Japan?
My restaurant is little far from the station and also the fee seems little expensive but we'll prepare the real sushi ingredients and time.
The lesson will be a great experience for you.

Oki's cooking lesson for foreign tourist

There are so many tourist from overseas to Japan.
I heard that  Foreign tourists who came to Osaka between October from January  this year, seems to have been 5.25 million.

So I've been thinking about opening my short team cooking lessons for foreign tourist.
how that sounds?

If you are coming to Osaka. you can learn sushi or vegetable carving from sushi chef!

I think it is good about three hours at a time.
I'm going to settle the several course which I can teach.
You can choose what you would like to learn.

for instance,
Learning Sushi course:

/How to cook the rice
/how to slice the fish
/how to roll the sushi
/how to make the nigiri sushi

Learning Basic Japanese food

/how to treat the fish
/how to cut the fish in portion
/how to make miso soup 
/how to make basic fish dish 

Learning sushi cake for the partys

/how to cook the sushi rice
/how to cook the egg
/how to prepare the fish
/how to decorate the cake 

Learning Vegetable art for your meal

/Sweet potato 

and after the every lesson.. let's enjoy the meal that you made,
and questions and answers, talk about Japan and your country so on.

then Why only for the people from overseas?

Because, there are so many cooking school in Japan for Japanese already.

Also , I wish I could give a good memories and experience for foreign people 
who decided to choose Japan!!

You can take the lessons from 2 persons.
The lesson fee will be around 3500-5000 yen?  per person.

Here are some things that I have to solve.
/My restaurant is far from the station (8 minutes by foot),
/My restaurant is so small so if there are 3 or 4 more people,
 I need to rent the kitchen studio.
